If you want to keep your cool, you might want to pass up those greasy wings and gooey dessert. A new study from the University of California, San Diego, suggests that people whose diets are higher in trans fats are more prone to aggression.

Trans fats, or hydrogenated oils, have made the news in recent years because studies have strongly linked them to heart disease and cancer, and some locales have passed laws restricting their use. They are still common, however, in restaurant food and many grocery items.

Beatrice Golomb, a physician and associate professor of medicine at U.C. San Diego, wondered if trans fats might affect behavior, after noting how they interact with a type of healthy fat. Past studies found that docosahexaenoic acid—or DHA, a long-chain omega-3 fatty acid—has a calming, antidepressant effect. Trans fats disrupt the chemical process that leads to the conversion of fatty acids into DHA, which led Golomb to suspect that trans fats might be linked to aggression.

    That’s ok, the problem is that there are different kinds of trans fats. We can’t generalize because the studies are conducted with artificial trans fat, and never with natural trans fats coming from grass fed meat for example. These occur naturally in the milk and body fat of ruminants (such as cattle and sheep) at a level of 2–5% of total fat. Natural trans fats, which include conjugated linoleic acid (CLA) and vaccenic acid, originate in the rumen of these animals. CLA has two double bonds, one in the cis configuration and one in trans, which makes it simultaneously a cis- and a trans-fatty acid. THERE ARE STUDIES THAT POINT TO THE BENEFECIAL PROPORTIES OF CLA.

    Animal-based fats were once the only trans fats consumed, but by far the largest amount of trans fat consumed today is created by the processed food industry as a side effect of partially hydrogenating unsaturated plant fats (generally vegetable oils). These partially hydrogenated fats have displaced natural solid fats and liquid oils in many areas, the most notable ones being in the fast food, snack food, fried food, and baked goods industries. They can only be made by cooking with a very high heat, at temperatures impossible in a household kitchen. (some parts are taken form wikipedia)
